I saw a post on encryption in Windows but not for Mac.
For Mac, my current plan is to create an encrypted sparse bundle, move the folders [1] there, and update the location.
It was explained that using cloud-based location is not recommended because of syncing issues, so those new volumes would be local only.
Before I start, I wanted to see if the community had recommendations? Thank you

By default the eM Client Mac database is in the following hidden folder.
(Mac Hidden hidden eM Client database folder)
“Users\yourusername\Library\Application Support\eM Client”
You can change the database storage location via “Menu / Settings (Preferences) / General / Storage”

Yes the database should be on a fixed “internal local hard-disk” and not on a cloud or portable / removable ext drive or you could risk getting mail database errors, corrupted data or complete data loss. Also “dont separate / split any of the hidden database files or folders”.

If you are going to encrypt the hard-disk where the database resides, regularly backup eM Client “incase of any possible hard-disk failure” that may arise as I’ve seen encrypted drive failures and it’s sometimes a nightmare getting data off them.
You can setup either automatic periodic backups via “Menu / Settings (Preferences) / General / Backup” or manually via “Menu / Backup”.
