What is the right config for Ionos Mail (SMTP + IMAP) in eMClient
What does a red triangle means in the sync ?

Depending on your eM Client version i believe these are the Ionos account server settings.

eM Client V10.3.x or higher

(IMAP)
imap.ionos.com Port 993 "Use TLS on Special Port”
Or
imap.ionos.com Port 143 "Use STARTTLS if available”

(SMTP)
smtp.ionos.com Port 465 "Use TLS on Special Port”
Or
smtp.ionos.com Port 587 "Use STARTTLS (Always)”

eM Client V6 to V10.2

(IMAP)
imap.ionos.com Port 993 Use SSL/TLS on special port (legacy)
Or
imap.ionos.com Port 143 Use SSL/TLS if available

(SMTP)
smtp.ionos.com Port 465 = Use SSL/TLS on special port (legacy)
Or
smtp.ionos.com Port 587 Force usage of SSL/TLS

What does a red triangle means in the sync ?

Could be wrong server settings or could be wrong username or password or could be the remote mail server not currently available etc.
