I just purchased a computer running Windows 10 pro. I want to move eM Client and all my folders from my old computer running Windows 8.1 pro. What is the best process for doing this?

That will make an exact copy of what you have now in eM Client in Windows 8 and restore it exactly the same on your new Windows 10 computer via the Menu / Backup & Menu / File / Restore.
