Is there a way to have TO listed in the the email records along with FROM and other items… I have reviewed the MENU–> VIEW…>>> COLUMNS… and I cannot find how to have the TO listed with email records. It appears that TO is not listed in the offering???

If I look at Menu > View > Columns I see both TO and FROM listed in the “offering”. Am I missing something in my interpretation of your post?
You won’t see ”To" if you have “Conversations” enabled.
I’m on mobile so I can’t produce a screenshot for OP. They have to disable conversations, I guess, in Menu, Mail, Read (or something like that).
I don’t use conversations so that is good to know.
