It depends on the email provider whether they sync with the server or not, and how they sync.
So for different servers it may be we don’t sync the tags, we do sync the message tags, or we sync the tags and manage the list of tags.

Yes, in that case it is because we sync the tags on the message.
We don’t manage the list of tags so you won’t have the colours, and you won’t see them in the list. That option is not supported with your server.

Gary, so if I’m following correctly, it will not sync the local tags then? If it will then I haven’t figured out how to make that happen then.
Currently all my tagged emails on desktop client not syncing over to mobile app.
It depends on what the server supports. So:
The tags don’t sync. That means if you tag a message on one device, on the other device it has no tag.
The tags on messages do sync. That means if you tag the message on one device, you see the same tag on the message on another device.
The tags on messages and the list of tags sync. That means you see the tags on the messages on the other device, and if you go to Menu > Tags, you see the list of server tags for that account as well. So if you create a new tag on one device, even if you don’t use it, you will see it in the list on the other device. That is for server tags only, as the list of Local Tags doesn’t sync.
I wanted to apply a tag to all mails from a particular contact so I set-up a new rule (in the desktop app) and created a new tag that I wanted).
That rule applied that tag correctly but later when I went to filter the tag list on mobile the new tag had not replicated but If I check emails from the person on mobile I can see the tag has been assigned.
Is it possible to provide the users a list of email service providers that have tags function that emclient can view and change and sync across the devices?
As far as I can tell, outlook.com exchange uses categories which is not visible by emclient. So tags obviously won’t work across multiple devices for Microsoft emails. My guess is this server tags sync works for Google email, not too sure about others like Apple, Proton, Yahoo, GMX, AOL.
The other approach would be providing the capability sync local tags and categories (also customisable) as a premium feature. I will be happily paying for that.

But you can absolutely sync the Category list on Exchange accounts as tags, we sync the whole list via the EWS protocol for both Microsoft and SmarterMail server.
The issue with the free Microsoft accounts (such as outlook.com, hotmail, msn.com, live, etc.) is that they cannot be set up via the Exchange protocol in external apps anymore, since Microsoft does not allow us to use the secure OAuth in combination with the EWS protocol for them.
I tried and watched, but just couldn’t figure it out. My outlook.com account is part of family 365 subscription, so not a free account. But when setting up account in eMClient, Automatic Setup doesn’t work just stuck at looking for server configuration records, manually selecting Exchange in Mail type, the server was found, authentication failed even when I turn off 2-factor authentication. The only way to set it up is through Outlook.com Mail type which uses SMTP, IMAP and AirSync all 3 services. I also tried a work M365 account, still no luck with automatic setup or exchange mail type. I really wish eMClient to have this email organisation feature without relying on the actual email service provider. I don’t know about others. But my intention of moving from Microsoft Outlook to eMClient is to diversify and decouple myself from some of the multinational technology company, their systems and services, meaning not only the front end, but the actual email service backend as well. eMClient is almost there as a promising alternative. It is just a pity for it not to have this useful feature so the user’s email seamlessly work the same way on PC and mobile. Put it this way, people happily using Gmail or Microsoft email accounts are mostly likely going to stick with their front client/web service to access their emails. To gain more users for eMClient to compete with the big players, it gotta be not only compatible with as many email service providers as possible, but also natively provide more functionalities on majority of device types.
