I couldn’t find the part of the menue where from I can restore my backup.
I guess,where is possible to make backup,there should be a way to restore.
Can you help me please?

To restore your Backup:
Menu ->File ->Restore ->Select the Backup you want to restore.

Does the Backup (from a folder with *.EML files) also restore the settings? For example, the signatures, the aliases, the font settings, etc?

The process to backup eMC can be setup to run automatically, plus you can run backup manually.
1./ Automatically:
Menu ->Settings ->General ->Backup ->Frequency (1 day)->Preserve (5)->Apply & OK
2./ Manually:
Menu ->Backup
To Restore:
Menu ->File ->Restore ->Select the Backup you want to restore.
The restore of a backup does what it says and restores eMC to the state it was in at the time of the backup including settings, signatures, fonts etc

Try Menu/File/Restore. I agree, logically backup and restore should be next to each other
