I figured out how to fix it so everything goes to the primary tab, but I can’t find any info on how to create new tabs…can it be done?

You can “right click in the space just to the right of the Category tab” and click Category Tabs and then select whatever Category you want as per the example screenshot below for a Gmail account.
You can only currently use the Mail Categories that are available within your account via “Menu / Settings (Preferences) / Mail / Categories”.
If you would like to be able to create your own Categories or Rename Categories etc, there is a current Sleekplan suggestion where you can vote for that idea.
