I found where I can specify which font and size to use for composing emails. Is there a setting to change the font/size of the mail in my inbox and other folders?

There is for plain text messages:
For most HTML messages the font is specified in the message code, so that setting probably won’t have any effect.
What you can do though, is zoom in on the message body if that is of any use to you. Use Ctrl + to zoom in, and Ctrl - to zoom out. Ctrl 0 to reset.

I don’t know if it’ll help you but found I could change Inbox and Folder fonts by going to Menu/Settings/Appearance/Lists - in the Fonts section I changed all three options to what I wanted, click ok and Close & Save
