Is there a keyboard shortcut to jump to the Calendar Today view?
Something like on Google Calendar where you can press “t” to jump straight to the Today view.
If there isn’t an existing one is there a way for a user to add custom keyboard shortcuts?

There are shortcuts built into eMC that you can edit, also you can add your own.
Menu ->Settings ->General ->Shortcuts
There is no standard shortcut for what you want
Probably the best you can do is the following that will take you to Today when you open Calendar
Menu ->Settings ->Calendar ->General ->Select Go to Today every time calendar is opened ->Apply ->OK
