When you compose an email, you can insert the date and time by either of two methods:-
1). Click in the body of the email and “right click” your mouse. Then click “insert” on the drop down menu and select “date & time”.
or
2). Click in the body of the email and then click “Menu” at the top left. Then click “insert” on the drop down menu and select “date & time”.

You can do it with a variable. The short date form is {Date}.
So compose a new message and where you want the date to be inserted, just type {Date}. See 1 below. When you click Send, it will be replaced with 24/03/2020. See 2 below.
If it becomes arduous to keep typing {Date}, you can create a Quicktext, which can be inserted by right-click > Insert > Quicktext or from the icon bar drop-down. For more on Quicktexts, see the Help File.

Yeah, variables in Quicktexts are very handy. Just wish there were more options.
