In view of the lastest ransomware attacks on various large companies, how safe is the eMail Client system? How safe are my emails? Could they be hacked into and the information taken? Could we be in the positiion of not being able to access our emails and their attachments?

No application is safe if you let ransomware on your device. It can change files names and encrypt your data, making your data inaccessible, etc.
Reduce the risk of a ransomware attack by ensuring your operating system, apps, and security applications are always up to date and have available security updates applied.
Check all your security settings in the operating system, browsers, and be careful what you click on.
Re email security, unless you are using encryption on your emails, an email is effectively like sending message on a postcard, it can be intercepted at a number of points in its travels and email files can be stolen by malware.
In eM client, consider PGP privacy and check the settings at Mail > Privacy.
