Hi Mark,
easiest way for this is to have your email set up as a POP3 account, which downloads your messages from the server when you open your mail in your device.
Alternatively, you can move all your mails to local folders which will remove them from the server and for future emails you can set up a Rule for received mails to be moved to these local folders.
Local folder can be activated through Tools > Settings > General by checking the box “Show Local folders.” Rules are set up in Tools > Rules.
