Yes, they both appear in the, "Accounts:, window.

Is it possible you are using a Free License and have more than two accounts setup?

Also, how do I relocate the data files to My Documents?

No, you can have two accounts, but if you have more, only two will show in the folders.

It is better to leave the database where it is as there is no advantage to having it in My Documents. In fact it can be an issue if your documents folder is being synced with online storage or being backed up by another application.

If you want to move it though, go to Menu > Tools > Settings > General > Storage and select the new location. Then close eM Client and move the contents of the C:\Users_yourusername_\AppData\Roaming\eM Client folder to the new location.
