I created an IMAP and POP3 account with the same email address
I am able to set the PO3 as my default however only the IMAP shows up in the Left Pane not the POP3

I do not normally use eM Client but I do know IMAP is preferred.
I do not know if is possible to use IMAP & POP with eM Client at the same time.
If it is be certain that if POP is not showing check that you have POP3 selected at the bottom of General section of the Account setup

In the very last screen of the POP3 setup you can choose to use Local Folders for storage of the messages, or for the account to have its own folder tree.
If you chose to store the messages in Local Folders then that is where you will find them.
