The setting is in Menu > Settings > Mail > Templates and Signatures. First select the account, then which template you want to use for that account. You can have different templates for new messages as to replies or forwards.

If I do it this way, every new email will have this template. But I only want it for some and not for every email. The same applies to mail confirmations.

I have an issue related to templates. When press new, by default the sender account is my default mail account and the template used is the one for that account,
If i need to change the sender account, which uses a different template, the new template info is not changed automatically.
Unfortunately you can’t change the template once you have begun composing a message.
You can either first click on the account folder you want to send the message from then click the New button, and it will use the template associated with that account, or you can click the down-arrow in the New button and choose Mail > Template to select a different template.
