Is there a way to add a BCC email address to all emails? Right now if I forward an email to my CRM, the CRM will attach it to my contact. However, in outlook it would integrate in and automatically add the email for the CRM. I don’t see a way to do this in eM.

unfortunately this is not a feature available in version 6.
It is, however, already implemented in the upcoming version 7, which is currently in its testing phase.
