Contacts Display Format is inconsistant

Also when I update a Contact’s profile - I loose the Last Name, First Name format, while all the other Contact remain in that format.
When I go to Contact - Settings - General - Update Contacts the Last Name, First Name format does not return.
WHAT IS GOING ON?

Open the contact and click on Full Name

If the First and Last name are in separate fields, then the update setting will work.

If the First and Last names are all in one field, then the update setting will not have any affect.
