I don’t believe you can. I assume you would want this to distinguish between being the to: vs. the cc:? eM Client’s conversation mode does not list all messages (combines them on one line) in the message list, so maybe they thought it was superfluous? I, however, see the possible need, although I haven’t missed it.

the To column can be added as Yeshua above describes, but cannot be visible when you have Conversations enabled in the Mail list.
You can change the setting for Conversations in Menu>View>Conversations.
