Can I change the available options of a task status?

I would like the ability to edit some of the various “list” fields used in the application. For example, the task “status” field is limited to a few options. (Complete, Deferred, etc). Depending on what line of work users are in, they can customize it for their needs to make the task object more powerful for them.

I understand I can accomplish the same sort of thing using the Category field but I think it would be good if the tool could handle this for other items like other clients can.

Unfortunately this is not possible, task statuses needs to be standard because otherwise they would be unable to synchronize with server and other email clients.

Best thing to use for this are categories.
