I just found out, that my EMClient is set to “backup every 2 weeks”, but the last backup is from December 2025. What went wrong?

You can try this it will completely reset Backup
1./ Disable Backup in eMC completely
2./ Go to Windows “Task Scheduler” then “Task Scheduler Library”
3./ In middle window DELETE eMC
4./ Go back to Backup in eMC and add settings you require
5./ This will create a new entry in “Task Scheduler Library”

I do not use the banana OS.
Don’t know why you are referring to Windows as Banana OS, but as sounds like you have a Mac, if eM Client is not automatically backing up anymore, then go to “Menu / Settings / General / Backup” and disable the automatic periodic backup and Save Settings.
Then “close and reopen eM Client” and then go back to Settings and re-enable the automatic periodic backup and also suggest to “set a different backup path location” eg: “Documents / eM Client / Backup” incase the originally path set is the problem. Then see if that fixes the problem.
If disabling and re-enabling the backup and setting a different backup path location still has the same problem and won’t automatically backup and you are running one of the last 3 Mac OS’s, then could be your eM Client version “might need uninstalling and reinstalling or updating”.
You can see all the latest Mac versions via the release history page. If you do update to a later version, make a backup of you current version first via “Menu / Backup” incase you need to restore for any reason and close eM Client before updating.

I have Windows OS & Mac OS and both work fine for me personally with eM Client automatic backup.
