authenticated but not connected

Seems this has been brought up, but I don’t see a solution as of yet.

I get errors whenever trying to access/refresh a folder that reads:
[IMAP] Cannot open folder “xxxx@xxxx.com/Inbox/”. (User is authenticated but not connected.)

I get the error when initially starting eM Client as well as trying to open Trash, Sent, or any folder.

It is an Outlook.com account, but with my own domain name.

I would suggest recreating the account as an Exchange rather than IMAP account.  This should work much better and also allow you to sync your contacts and calendars.
