How do I change the account server settings from IMAP to POP3?

you have to do this by deleting that account from Tools - Accounts and re-add it after.

please be aware of that when account supports both IMAP and POP3 then automatic configuration will always choose IMAP, for POP3 safer confiuration is Tools - Accounts - new account… - mail - other, where you can manually setup everything.
