It wants to compose in MS Sans Serif 8.2pt, even though the Compose setting is quite different. I am trying to set a template to fix (there are none), but is there a global option that overrides the setting?

The basic settings: font, size and colour can be set in Menu > Tools > Settings > Mail > Compose. The more specific settings can be set with the workaround - creating a template with specific format options and setting it for all emails (new, FW, RE).
