I prefer a dark theme and have tried a bunch of them. But none are showing the unread numbers in the yellow font shown on the download page. It seems there is something system-wide that is overriding that entry. I’ve looked at the .xml file and cannot find an entry for anything with “unread” in it. Here is an example

I am not sure where you are seeing a yellow font and do not know
how you have eMC configured.
Does this image illustrate what yo want.
Remember that the clarity in which items are displayed is affected
by your system GPU.

I fixed it in a very obscure place. Hope this helps someone else.
Go to Menu > Settings.
Navigate to Mail > Read.
Look for the section Message List.
Uncheck the box that says: “Show counter for recent messages instead of unread”.
Click Save & Close.
