Is there a way to copy/backup of server folders to local folders - ideally on a scheduled basis
you can set up automatic backup of your database in Menu>Tools>Settings>General>Backup.
This will copy and save your current state of your database files, so it saves your local data and settings.
Another feature is Automatic Archiving (…>Settings>Mail>Automatic Archiving).
You can set how old the messages that apply for Archiving should be and then choose the scope of Accounts/folders on which to apply them.
Archiving will remove the message from your mail server and save it locally in your computer.
If you archive/save messages locally it is recommended to make backups of your database.
Both of these actions can be scheduled.
