I am about to delete an old email account (on Gmail) that I have. However, I still want access to the old emails from that account. I want to use eM Client to store those old emails, but I can’t figure out how to store the emails locally without connection to the account, and my worry is that when I delete the account, all of the emails will disappear out of the client. Does anybody know the best way to ensure that I preserve an offline copy of all of my emails on my local machine, even when the account itself is gone?

you can export all your emails into .eml using File - Export… - Export to .eml files…
then you will be able to read these emails without having them under email account (these files are able to be opened in eM Client itself or in another emails clients too)
