Why can’t we set font lists for the default compose font?
You can set the default desktop preferred compose font via going to “Menu / Settings (Preferences) / Mail / Compose” as per screenshot example below.
If you are referring to the iOS mobile app you can change the default compose font via “Menu / Settings / Mail / Compose” and click “Preferred Font for messages ” under Preferred Style. Then click “Family” to choose font.
