I don’t find a setting on the eM Client that will allow it to “draw in” my e-mails from my server, leaving my server’s e-mail account empty. Is there anything I can do to accomplish this?

is your account set up as POP?
If so, go to Tools>Settings window and under the POP tab change the server settings.
The deafult in eM Client is to Leave a copy on the server for 7 days.
You can change this to remove the copy right away.
If your account is set up woth a different protocol, you will need to set up your account anew with the correct settings for POP account using the manual setup under Mail>Other.
