In order to fit with my method of handling e-mails, I would like to know two things about handling local folders:
can local folders be renamed and, if not, can local folders as they appear be eliminated and new local folders be created?

You can create your own folders within Local Folders.
You can’t delete or rename the system folders that are the initially, but if you don’t want to see them, right-click on one and choose Hide. That will create another folder called More, and hide that folder therein. More is always collapsed when you start eM Client, so convenient for hiding folders you don’t ordinarily want to see.
There can only be one set of Local Folders, but you can have as many folders inside it as you want.
So it could be something like this.
