Just noticed I don't have an outbox folder

I have it in settings checked but it doesn’t show up

Try “right click on your email address” and see if you have the Outbox checked in view options.

Or if you have Favourites (global folders enabled) right click on Favourites at the top and see if the Outbox is checked / enabled.
