Settings question. Is there a setting to keep a copy of email on the server?

That largely depends on what protocol you are using to connect to the server. With IMAP or Exchange all messages are stored on the server, with a cached copy stored on the local computer. With POP3 messages are stored on the local computer, and a copy of the Inbox messages may be stored on the server. Some providers like GMail also store a copy of the sent messages. 

You can change the settings for POP3 in Menu > Tools > Accounts. Then click on the POP3 tab for your account, and scroll down to Server Settings.
