If possible to completely and utterly keep me away from Outlook could you add a notes section to EM Client.

Hi, unfortunately we are currently not supporting notes, we are considering this option for future releases.
And a suggestion for your if you want to get rid off outlook you might find Microsoft One Note as an appropriate tool for notes management.
