Still don’t know where or what constantia is.

However, to change the font in the message list, go to Menu > Tools > Settings > Appearance > Lists.

To change the font for composing messages, go to Menu > Tools > Settings > Mail > Compose > Preferred Style. You can also create templates for more advanced formatting. You can also select different fonts while composing a message from the icons on the toolbar.

To change the font in plain text messages you receive, go to Menu > Tools > Settings > Mail > Read > Preferred Style. Generally HTML messages you receive will have their own font, and you cannot change that when viewing in HTML mode.

To change the fonts for menus, and other layout, you will need to edit the Theme.
