I would like to set a default email writing/composing colour to blue, how do I do this? I don’t always want to change the font colour manually.

unfortunately this is currently not possible in eM Client, since you’re not the first who would like to see this feature, I’ll mark this post as an Idea so other users can vote on the feature.
If the feedback is sufficient we might add it in future releases.
Currently you can only change the size and the font for new messages.
