how do I setup eM Client email addresses? my current addresses will be gone when I cancel my Centurylink account and move to Starlink internet.

This is not how eM Client works. eM Client is an email application (like Outlook or Thunderbird) and not an ISP (Internet Service Provider). So you need an email address (a mailbox) set up with an email service provider (like Google, Yahoo and many others) or from your ISP before setting it up in eM Client.
eM Client acts then as an email reader that accesses and manages a user’s email. Emails are stored in the user’s mailbox on the remote server until the user’s email client (eM Client) requests them to be downloaded to the user’s computer, or can otherwise access the user’s mailbox on the possibly remote server.
Once you have your mailbox set up you can come back on the forum and ask users how to set them up them on eM Client.
