So from the screenshots you sent Olivia, it looks like I can program the quick text to say what I need it to say and name the quick text whatever I want to name it.  Am I correct?

Yes,
you will be then able to choose your prepared Quicktexts from the Message editor toolbar or use keyboard shortcuts to insert them.
