Is there any way to enter a date (through a template etc) like a macro where if you put [Today] it enters the current date.

no, there is currently no possibility of doing that.
You can have a look at ActiveWords (http://www.activewords.com/) and then specifically it’s ‘Inplace’ add-in.
It will allow you to automatically enter the current date in any program, not only in eM Client.
Besides this, it has many more useful short cuts to generate text and automate tasks.
