Could we have shortcut keys to classify or declasiffy a message in a category
Alt 0 to declassify, Alt 1 to classify in the first category …
Like in thunderbird in fact !

By category, do you mean Tags?
If so, go to Menu > Tags, where you can assign keyboard shortcuts to tags.
