I currently use Thunderbird and use this option to delete email from the inbox while allowing me to store them locally on my computer. This way I can keep the server clean for current/pending emails while still having a history of the emails if needed. Is there a way to enable this feature?

unfortunately there is no such setting.
I can suggest using local folders for this, though - your messages will be removed from server but stay in your local database.
You can enable local folders in Tools > Settings > General > Show local folders.
