Are eM client cateogries meta tags? Are you able to sync categories with other mail server environments such as Zimbra?

Don’t think so. Category is just a tagging method, its eM’s way of localization. Similar to ‘Labels’ in Gmail. Unless eM is working with Zimbra to implement this on their server, which I’m not aware of.
