You don’t normally associate file types directly in the mail client.
You associate file types in the OS with the right click / open with as you wrote using Windows Explorer or Mac Finder.
Then open eM Client which “will then open those file types with whatever you program you selected” in the OS.

Yes, I know, but sometimes I need to open the attachment in another application and the only way is to save it to disk, that’s why I’m asking
