There should be an option to detach/delete attachments.

Edit Subject

When an email has a large attachment - or an attachment that is known to be superceded by a later version - it is often desirable to delete the attachment before filing the email. This saves disk space and reduces unwanted information. Ideally, this would be a "detach" option, which saves the attachment, deletes it from the email, but leaves a link to the saved file.
